This coffee is obtained by placing the coffee cherry directly to dry in the sun without going through wet processing. The cherry under the sun is dehydrated and the grain absorbs all the sugars from the pulp and mucilage. The cup obtained presents notes of dehydrated fruits -such as plums and raisins- and very tight and sweet notes, and very marked aftertastes.
